
5 1/2 cups blended apricots
5 1/2 cups sugar
1 cup corn syrup
4 tbsp lemon
2 tbsp butter
* Apricots are only pitted for blending, not peeled
Stir all ingredients in a large pan and continue to stir until it comes to a boil. Boil 1 minute, lower heat and simmer for 5 minutes. Pour into 5 prepared pint bottles, place new lids and rings, water bath 20 minutes. Invert jars for 5 minutes after waterbath, turn right side up and they should seal.

LOVE IT!
We have one bottle left from 2004 and not enough time to eat it in before we leave. Do you think a neighbor would be grossed out because it's so old? Should I not even eat it for that matter?
